After being awarded his Grand Diploma from Le Cordon Bleu Culinary Arts Institute at the age of 18, Chef Shane Christoffer has spent the past 27 years learning, experiencing and perfecting his culinary skills by working at some of Canada’s top hotels and resorts from the east coast to the west coast. He has delighted palates at the Fairmont Algonquin in St. Andrews-by-the-Sea, New Brunswick; the Fairmont Queen Elizabeth in Montreal; the Queen's Landing Hotel in Niagara-on-the-Lake; and the Pantages Suites Hotel and Cosmopolitan Hotel in Toronto, which won the prestigious Conde Nast award.
Shane moved west to broaden his culinary experience by working in the Okanagan Valley’s wine country and then made his way to the top of the peak at Whistler, British Columbia, where he was Executive Chef at five establishments simultaneously. As Executive Chef, Shane established restaurant concepts, managed corporate catering and was responsible for the ongoing creation of innovative menus which kept Whistler’s eclectic patrons coming back for more.
After his successful experience in western Canada, Shane made the move back to Ontario. He was enjoying a new and challenging position as the Culinary Director of a restaurant group in Toronto, where he was able to live his passion of launching new restaurant concepts.
Like most of us today, Shane found himself impacted by the challenges of the COVID-19 environment. Ever innovative and inventive, his initial plan of providing lobster to the hospitality industry has grown into a neighbourhood seafood market with direct access for the consumer. The Lobster Baron offers fresh fish and shellfish, including top quality live lobster.
We are appreciative of the positive support and energy our new community has given us and look forward to keeping our customers engaged, with not only our fresh fish, shellfish, and live lobster, but also with our new offerings as we expand our products and services.
